Seaside Fish Tacos

Bright coastal flavor, crisp cabbage and lime make a light dinner that still tastes complete.

Ingredients

  • 1½ lb firm white fish
  • 1½ tbsp Seaside Seasoning
  • 1 tbsp oil
  • 8 small tortillas
  • 2 cups shredded cabbage
  • ½ cup plain yogurt or sour cream
  • 1 lime

Directions

  1. Coat fish with oil and seasoning.
  2. Sear in a hot skillet for 3 to 4 minutes per side, until fish reaches 145°F and flakes easily.
  3. Stir yogurt with half the lime juice.
  4. Flake fish into warm tortillas and top with cabbage, sauce and remaining lime.

One-pan dinner

Sheet-Pan Coastal Chicken and Vegetables

A fresh weeknight dinner with one seasoning and one pan.

Ingredients

  • 4 boneless chicken breasts
  • 2 tbsp Seaside Seasoning
  • 2 tbsp olive oil
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 pint cherry tomatoes

Directions

  1. Heat the oven to 425°F.
  2. Coat chicken with half the oil and seasoning. Toss vegetables with the rest.
  3. Arrange on a sheet pan and roast 22 to 28 minutes.
  4. Remove vegetables when tender and cook chicken until it reaches 165°F. Rest before slicing.

Lemon Seaside Shrimp Rice Bowls

Quick skillet shrimp turn leftover rice and crisp vegetables into dinner.

Ingredients

  • 1½ lb peeled shrimp
  • 1½ tbsp Seaside Seasoning
  • 1 tbsp olive oil
  • 4 cups cooked rice
  • 1 cucumber, sliced
  • 1 cup halved tomatoes
  • 1 lemon

Directions

  1. Toss shrimp with oil and seasoning.
  2. Sear in a hot skillet for 2 to 3 minutes per side, until opaque.
  3. Divide warm rice, cucumber and tomatoes among bowls.
  4. Add shrimp and finish with lemon juice.
